Ingredients
2 eggs
60ml lactose free milk
1 tablespoon olive oil
1/2 cup spinach
1/4 cup cherry tomatoes
1/4 cup fresh basil (loose)
Salt
Pepper
Lime juice
Method
Whisk eggs and milk together in a bowl. Season with salt and pepper.
Heat olive oil in a pan. Add spinach and cherry tomatoes. Sauté until spinach wilts and tomatoes soften.
Pour the egg mixture over the veggies.
Let it cook without stirring until the edges set.
Sprinkle basil leaves. Optionally, add a bit of lime juice.
Fold the omelette in half. Cook for a bit longer until set but slightly moist inside. Serve hot.
